Ingredients
¾ cup
Rice flour
¼ cup
Fine cornmeal
1 Tbsp
Wheat flour
2 Tbsps
Oil
¼ cup
Plain yogurt
1 cup
Water
(room temperature, as needed)
1 tsp
Green chilies
(crushed, or to taste)
1 tsp
Ginger
(crushed)
½ tsp
Garlic
(crushed)
1 tsp
Ground coriander/cumin mix
1½ tsp
Salt
(or to taste)
2 tsps
Sugar
¼ tsp
Turmeric
2 tsps
Ground raw peanuts
¼ cup
Preffered vegetables, finely chopped or grated
( i.e.: onions, zucchini, dudhi, green fenugreek, fresh dill, green onions, etc. )
Oil
(for cooking)
Instructions

In a deep dish, mix the flours with oil.

Whisk together yogurt and water, add to the flour to make a pourable thick batter.

Use more water as needed, make sure there are no lumps.

Combine the remaining ingredients except the vegetables.

Cover and ferment for a couple of hours.

Mix the vegetables of your choice in the batter.

Heat and grease a non-stick frypan on medium heat.

Pour about ¼ cup of batter in the heated pan, and quickly spread with a spatula to form a 6 inch circle (like crepes).

Cover and let cook for one minute then carefully flip.

Drizzle a little oil around the edges.

Cook until golden on both sides and is of desired crispness.

Repeat with the remaining batter and stack the puda.
