Khichu
Ingredients
2 cups
Rice flour
3½ cups
Water
1½ tsp
Sanchoro
2 tsps
Salt
(or to taste)
1 Tbsp
Cumin seeds
1 tsp
Ajmo
2 tsps
Sesame seeds
½ cup
Green coriander
(finely chopped)
1 tsp
Green chilies
(crushed, or to taste)
1 tsp
Garlic
(crushed)
1 Tbsp
Oil
Instructions

In a large saucepan, boil water with sanchoro, salt, cumin and ajmo for 3-4 minutes.

Reduce heat to low, add sesame seeds, coriander, chilies, garlic and oil. Mix.

Gradually add the flour and stir continuously until thickened to a dough.

Remove from heat. Empty into a large dish and mix well, dough should be very soft.

Prepare and heat a steamer.

Divide dough into 8 balls and make 6 inch long cylinders.

Place in a greased steamer plate and steam for 15 minutes.

Remove from heat, let cool slightly.

Cut thick slices and serve with oil and athana masala.
