Dough

Ingredients

Wheat flour

Gram flour
¼ cup
Corn meal
(fine)

Salt
(or to taste)

Ground coriander/cumin mix

Sugar

Red chili powder
⅛ tsp
Turmeric
½ tsp
Green chilies
(crushed)
½ tsp
Garlic
(crushed)
½ tsp
Ginger
(crushed)

Oil
Instructions

Mix the flours, add oil and rub.

Combine the remaining ingredients and make a smooth firm dough using cold water.

Cover and set aside.

Dal

Ingredients
½ cup
Tuvar dal
(wash)
1 Tbsp
Raw peanuts

Tomatoes
(cut chunks)
½ tsp
Cumin seeds
¼ tsp
Fenugreek seeds
2 cups
Water
1½ tsp
Salt
(or to taste)
½ tsp
Ground cumin
¼ tsp
Turmeric
¾ tsp
Red chili powder
2 Tbsps
Gor
(or to taste)
1 Tbsp
Ginger
(crushed)
2 tsps
Lemon juice
Instructions

In a pressure cooker, add dal along with peanuts, tomatoes, cumin seeds, fenugreek seeds and water.

Pressure cook on high for 7 whistles, about 10 minutes.

Turn off heat, let cool before opening.

Blend dal, add water for desired consistency.

Add the remaining ingredients, stir.

Heat dal on low.

Tempering

Ingredients

Oil

Ghee

Dry red chilies

Muatard seeds
¼ tsp
Fenugreek seeds

Cloves
1 inch
Cinnamon stick

Curry leaves
⅛ tsp
Asafoetida
(hing)
Green coriander
(finely chopped, for garnishing)
Instructions

In a saucepan, heat oil and ghee on medium and add red chilies.

When it browns, add cloves, cinnamon, mustard and fenugreek.

When crackled, add curry leaves and hing.

Carefully pour the prepared dal.

Bring to a boil then simmer on low heat.

Divide dough into 3 parts.

Take 1 part and roll into a 10 inch diameter circle, using flour for dusting.

It should be a little thicker than roti.

Cut into diamond shapes, about 1½ inch.

Repeat with the remaining dough.

Drop diamonds individually into the dal.

Add hot water if the dal is too thick.

Cook on low heat until the dhokri is soft and cooked.

Garnish with finely chopped green coriander.
