Kand (Ratalu) or Potato Sandwich
Ingredients
2 lbs
Kand
(substitute potatoes)
½ cup
Coconut
(peel and finely grate or chop)
⅓ cup
Roasted skinless peanuts
(coarsely crushed)
¾ cup
Green coriander
(finely chopped)
2 tsps
Green chilies
(crushed to taste)
1 tsp
Garlic
(crushed)
½ tsp
Ginger
(crushed)
1 Tbsp
Ground coriander/cumin mix
½ tsp
Salt
(or to taste)
1½ tsp
Sugar
2 tsps
Sesame seeds
2 tsps
Lemon juice
2 tsps
Oil
Instructions

Peel the kand and cut 20, ⅛ inch thick slices. Place in a bowl of water.

Combine all the ingredients for filling.

Prepare and heat a steamer, grease the perforated tray.

Lightly sprinkle salt on the tray.

Take a slice of kand, spread a thick layer of the filling and cover with another slice to make a sandwich.

Make all and arrange in the tray, lightly sprinkle salt on top.

Can layer if necessary.

Sprinkle any leftover filling on top of the sandwiches.

Steam on medium high heat for 15 minutes or until the kand is cooked.

Turn heat off and gently lift sandwiches and place on a serving plate.
