Vada

Ingredients
- 1 cup Fine cornmeal
- ¼ cup Jowar flour
- 3 tbsps Oil (semi-)
- ¼ cup Plain yogurt
- 1½ tsp Green chillies (crushed - to taste)
- 1 tsp Ginger (crushed)
- 1 tsp Salt (or to taste)
- ½ tsp Sugar
- 1 tbsp Sesame seeds
- Oil (for frying)
Instructions
- Mix the flours together, add oil and rub.
- Combine the remaining ingredients and make a semi-firm dough, using little water.
- Cover and let rest for 8 hours or overnight.
- Heat frying oil, pour 2 tbsp of hot oil in the dough and carefully bind.
- To test, drop a teaspoonful of dough into the oil and deep-fry on medium-high heat until puffed and golden.
- Break vada in half, it should look like honeycomb inside. If not, add a little more hot oil in the dough and mix.
- Form little round dumplings from dough as you drop in heated oil and fry the vadas until evenly golden.
- Remove and drain on a paper towel.
