Ingredients
  • 1 cup Fine cornmeal
  • ¼ cup Jowar flour
  • 3 tbsps Oil (semi-)
  • ¼ cup Plain yogurt
  • 1½ tsp Green chillies (crushed - to taste)
  • 1 tsp Ginger (crushed)
  • 1 tsp Salt (or to taste)
  • ½ tsp Sugar
  • 1 tbsp Sesame seeds
  • Oil (for frying)
Instructions
  1. Mix the flours together, add oil and rub.
  2. Combine the remaining ingredients and make a semi-firm dough, using little water.
  3. Cover and let rest for 8 hours or overnight.
  4. Heat frying oil, pour 2 tbsp of hot oil in the dough and carefully bind.
  5. To test, drop a teaspoonful of dough into the oil and deep-fry on medium-high heat until puffed and golden.
  6. Break vada in half, it should look like honeycomb inside. If not, add a little more hot oil in the dough and mix.
  7. Form little round dumplings from dough as you drop in heated oil and fry the vadas until evenly golden.
  8. Remove and drain on a paper towel.
