Purple Yam (Ratalu) Pakora
Ingredients
- 8 oz Ratalu (any shape, peeled )
- Coarsely crushed black pepper (for sprinkling)
- Coarsely crushed coriander seeds (for sprinkling)
- Oil (for frying)
Instructions
- Cut the ratalu into ⅛ inch thick slices.
- Keep submerged in water to prevent browning.
Batter
Ingredients
- 1 cup Gram flour
- ¾ tsp Salt (or to taste)
- ½ tsp Sugar
- ½ tsp Red chili powder (or to taste)
- ¼ tsp Turmeric
- ¼ tsp Asafoetida (hing)
Instructions
- Mix batter ingredients. Gradually add cold water to make a smooth, lump free, medium consistency batter.
- Heat oil on medium-high heat, pour a tablespoon of hot oil in the batter and mix.
- Pat dry a few slices of ratalu at a time, dip in prepared batter.
- Sprinkle each dipped slice with pepper and coriander on top as you place in heated oil.
- Deep-fry a few at a time until golden brown.
- Remove and drain on a paper towel.
