Kadhi

Kadhi Masala
Ingredients
- 1 Green chili
- 1 tsp Ginger (chopped)
- 2 cloves Garlic
- 2 tsps Amba aradh (chopped)
- ⅛ tsp Fresh turmeric (chopped)
- 2 tsps Green tuvar lilva
- 2 Curry leaves
- 2 tbsps Green coriander (chopped)
Instructions
- Crush together to make masala.
Kadhi
Ingredients
- 1 cup Plain yogurt
- 4 tsps Sour cream (optional)
- 2 cups Water (or to desired consistency)
- 1 tbsp Gram flour
- ¾ tsp Salt (or to taste)
- 1 tsp Sugar
- ¾ tsp Ground cumin
Instructions
- In a saucepan, prepare the kadhi.
- Blend yogurt, sour cream, water and gram flour together.
- Add salt, sugar, cumin and kadhi masala and mix.
- In a small tempering pot, melt ghee on medium heat.
- Add the red chili, as it browns, add mustard seeds.
- When it crackles add the cumin, fenugreek, hing and curry leaves.
- Stir for 10 seconds and immediately pour in the kadhi.
- Heat kadhi on medium heat, stir continuously until it comes to a boil.
- Stir for a couple of minutes more.
- Add some chopped green coriander, stir and remove from heat.
- Note: for kadhi masala, if all ingredients are not available, simply add crushed chilies to taste, ½ tsp crushed ginger, ½ tsp crushed garlic and less than ⅛ tsp of turmeric.
- Variation: substitute chopped green coriander for 1 tsp chopped green dill. Also substitute sugar for 1 tbsp of grated ripe banana.

- ½ tsp Mustard seeds
- ½ tsp Cumin seeds
- ⅛ tsp Fenugreek seeds
- 4 Cloves
- ⅛ tsp Asafoetida (hing)
- 6 Curry leaves
