Kadhi Masala
Ingredients
  • 1 Green chili
  • 1 tsp Ginger (chopped)
  • 2 cloves Garlic
  • 2 tsps Amba aradh (chopped)
  • ⅛ tsp Fresh turmeric (chopped)
  • 2 tsps Green tuvar lilva
  • 2 Curry leaves
  • 2 tbsps Green coriander (chopped)
Instructions
  1. Crush together to make masala.
Kadhi
Ingredients
  • 1 cup Plain yogurt
  • 4 tsps Sour cream (optional)
  • 2 cups Water (or to desired consistency)
  • 1 tbsp Gram flour
  • ¾ tsp Salt (or to taste)
  • 1 tsp Sugar
  • ¾ tsp Ground cumin
Instructions
  1. In a saucepan, prepare the kadhi.
  2. Blend yogurt, sour cream, water and gram flour together.
  3. Add salt, sugar, cumin and kadhi masala and mix.
  4. In a small tempering pot, melt ghee on medium heat.
  5. Add the red chili, as it browns, add mustard seeds.
  6. When it crackles add the cumin, fenugreek, hing and curry leaves.
  7. Stir for 10 seconds and immediately pour in the kadhi.
  8. Heat kadhi on medium heat, stir continuously until it comes to a boil.
  9. Stir for a couple of minutes more.
  10. Add some chopped green coriander, stir and remove from heat.
  11. Note: for kadhi masala, if all ingredients are not available, simply add crushed chilies to taste, ½ tsp crushed ginger, ½ tsp crushed garlic and less than ⅛ tsp of turmeric.
  12. Variation: substitute chopped green coriander for 1 tsp chopped green dill. Also substitute sugar for 1 tbsp of grated ripe banana.

  • ½ tsp Mustard seeds
  • ½ tsp Cumin seeds
  • ⅛ tsp Fenugreek seeds
  • 4 Cloves
  • ⅛ tsp Asafoetida (hing)
  • 6 Curry leaves
