Vegetable Lo Mein

Ingredients
- 8 oz Noodles (Such as spaghetti or lo mein)
- 2 tbsps Sesame oil
- 2 Dry red chilies
- 2 tbsps Ginger (grated)
- 4 cloves Garlic (thinly sliced)
- ½ cup Bean sprouts
- ½ cup Bell peppers (mixed colors, slice lengthwise diagonally)
- ½ cup Mushrooms (sliced)
- ¼ cup Snow peas (slice diagonally)
- ¼ cup Carrots (slice lengthwise diagonally)
- ¼ cup Green beans (slice lengthwise diagonally)
- ½ cup Baby corn
- ¼ cup Cabbage (shredded)
- ½ cup Water chestnuts (sliced)
- ¼ cup Broccoli florets
- ¼ cup Green onions (slice lengthwise diagonally)
- 2 cups Soy sauce
- 1 tsp Chili sauce (or to taste)
- 1 tbsp Hoisin sauce
- ½ tsp Salt (or to taste)
- 1 tsp Vinegar
- ¼ tsp Ajinomoto (optional)
- Green onions (sliced, for garnish)
- Red pepper flakes (for garnish)
Instructions
- Boil the noodles until cooked, strain and set aside.
- Heat oil in a large wok on high heat, add dry chilies.
- As it browns, add ginger and garlic, stir-fry for a few seconds.
- Add bean sprouts, bell peppers, mushrooms, peas, carrots and beans.
- Stir-fry for a couple of minutes.
- Add the remaining vegetables and the condiments.
- Cook for 2 minutes, stirring continuously.
- Combine the noodles, mix well and remove from heat.
- Garnish with green onions and sprinkle chili flakes.
- Note: Vegetables can also be served with sticky rice.
- Can add crispy tofu or cooked meat for protein.
Extra Gravy - Optional
Ingredients
- 1 cup Vegetable stock
- 1 tsp Cornstarch
- 2 tbsps Soy sauce
- 2 tbsps Hoisin sauce
- 2 tsps Brown sugar
- 2 tsps Sesame oil
Instructions
- Whisk together ingredients and stir into noodles.
