Ingredients
  • 8 oz Noodles (Such as spaghetti or lo mein)
  • 2 tbsps Sesame oil
  • 2 Dry red chilies
  • 2 tbsps Ginger (grated)
  • 4 cloves Garlic (thinly sliced)
  • ½ cup Bean sprouts
  • ½ cup Bell peppers (mixed colors, slice lengthwise diagonally)
  • ½ cup Mushrooms (sliced)
  • ¼ cup Snow peas (slice diagonally)
  • ¼ cup Carrots (slice lengthwise diagonally)
  • ¼ cup Green beans (slice lengthwise diagonally)
  • ½ cup Baby corn
  • ¼ cup Cabbage (shredded)
  • ½ cup Water chestnuts (sliced)
  • ¼ cup Broccoli florets
  • ¼ cup Green onions (slice lengthwise diagonally)
  • 2 cups Soy sauce
  • 1 tsp Chili sauce (or to taste)
  • 1 tbsp Hoisin sauce
  • ½ tsp Salt (or to taste)
  • 1 tsp Vinegar
  • ¼ tsp Ajinomoto (optional)
  • Green onions (sliced, for garnish)
  • Red pepper flakes (for garnish)
Instructions
  1. Boil the noodles until cooked, strain and set aside.
  2. Heat oil in a large wok on high heat, add dry chilies.
  3. As it browns, add ginger and garlic, stir-fry for a few seconds.
  4. Add bean sprouts, bell peppers, mushrooms, peas, carrots and beans.
  5. Stir-fry for a couple of minutes.
  6. Add the remaining vegetables and the condiments.
  7. Cook for 2 minutes, stirring continuously.
  8. Combine the noodles, mix well and remove from heat.
  9. Garnish with green onions and sprinkle chili flakes.
  10. Note: Vegetables can also be served with sticky rice.
  11. Can add crispy tofu or cooked meat for protein.
Extra Gravy - Optional
Ingredients
  • 1 cup Vegetable stock
  • 1 tsp Cornstarch
  • 2 tbsps Soy sauce
  • 2 tbsps Hoisin sauce
  • 2 tsps Brown sugar
  • 2 tsps Sesame oil

  1. Whisk together ingredients and stir into noodles.
