Schezwan Sauce
Ingredients
- 15 Dry red chilies (some seeds removed)
- ¼ cup Sesame oil
- 1 tbsp Ginger (crushed)
- 2 tbsps Garlic (crushed)
- 2 tbsps Onion paste
- ¼ tsp Ground black pepper
- 1 tbsp Green coriander (chopped)
- 2 tbsps Tomato ketchup
- ¼ tsp Salt
- 2 tsps Sugar
- 1 tbsp Rice vinegar
- 1 tbsp Soy sauce
Instructions
- Soak chilies in 1 cup of hot water for 30 minutes.
- Drain and blend to a smooth paste using little water.
- Heat oil in a pan on medium heat.
- Add ginger, garlic and onions, stir and sauté until the color begins to change.
- Add chili paste and the remaining ingredients, except vinegar and soy sauce, mix and simmer on low heat.
- Add water as needed to make a thick sauce.
- Simmer until the oil begins to separate, add the vinegar and soy sauce.
- Continue simmering for a couple of minutes then remove from heat.
- Cool and store.
