Ingredients
  • 1 cup All purpose flour
  • ¼ tsp Baking powder
  • 2 Eggs
  • ⅔ cup Sugar
  • 1 tsp Vanilla essence
  • ½ tsp Lemon zest
  • ⅛ tsp Salt
  • 1 tsp Lemon juice
  • 8 tbsps Butter (melted)
  • Powdered sugar (optional)
Instructions
  1. Prepare madeleine cookie tray by greasing with butter.
  2. Preheat oven 350°F.
  3. Sift flour and baking powder in a bowl and set aside.
  4. In a large bowl, beat together eggs, sugar, vanilla, lemon zest and salt until fluffy.
  5. Gradually add flour and mix well.
  6. Stir in the lemon juice.
  7. Pour butter around the edges and fold into the batter with a spatula, then stir.
  8. Pour about 1 tbsp of the mixture into each greased madeleine cookie tray compartment and spread to shape.
  9. Bake for 14 minutes on the top rack of the oven.
  10. Remove and sprinkle powdered sugar on warm cookies.
