Ginger Snaps

Ingredients
- 2½ cups All purpose flour
- 2 tsps Baking soda
- 2 tsps Ground ginger
- 1 tsp Ground cinnamon
- ½ tsp Ground cloves
- 1 cup Butter
- 1½ cup Light brown sugar
- ¼ cup Dark molasses
- 1 Egg
- Extra sugar (for coating)
Instructions
- In a bowl, combine flour, baking soda, ginger, cinnamon and cloves.
- In another large bowl, beat together butter, sugar, molasses and an egg until pale and fluffy.
- Using a spatula, fold half the flour in the mixture.
- When fully incorporated, add the remaining flour and continue folding until all the flour is absorbed.
- Shape dough into 2 inch balls.
- Roll around in sugar to coat.
- Place on ungreased baking sheets, 3 inches apart.
- Flatten slightly and bake for 12-15 minutes.
- Cool on a rack.
