Ingredients
  • 2½ cups All purpose flour
  • 2 tsps Baking soda
  • 2 tsps Ground ginger
  • 1 tsp Ground cinnamon
  • ½ tsp Ground cloves
  • 1 cup Butter
  • 1½ cup Light brown sugar
  • ¼ cup Dark molasses
  • 1 Egg
  • Extra sugar (for coating)
Instructions
  1. In a bowl, combine flour, baking soda, ginger, cinnamon and cloves.
  2. In another large bowl, beat together butter, sugar, molasses and an egg until pale and fluffy.
  3. Using a spatula, fold half the flour in the mixture.
  4. When fully incorporated, add the remaining flour and continue folding until all the flour is absorbed.
  5. Shape dough into 2 inch balls.
  6. Roll around in sugar to coat.
  7. Place on ungreased baking sheets, 3 inches apart.
  8. Flatten slightly and bake for 12-15 minutes.
  9. Cool on a rack.
