Peanut Butter Cookies (Peanut Blossoms)

Ingredients
- 1½ cup All purpose flour
- ½ tsp Baking soda
- 1 cup Butter
- 1 cup Sugar
- 1 Egg
- 1 tsp Vanilla essence
- ½ tsp Salt
- 1 cup Peanut butter (creamy)
- Sugar (for coating)
Instructions
- Preheat oven to 375°F
- In a bowl, combine flour and baking soda.
- In another large bowl cream together butter and sugar, add egg and whisk.
- Add remaining ingredients and mix well.
- Make 1 inch balls from the dough and roll in sugar to coat.
- Place on a greased baking sheet and flatten with fork tines in a crisscross pattern.
- Bake for 10-12 minutes.
- Cool on a rack or foil.
Variation
- Place balls on a baking sheet 2 inches apart.
- Bake for 10-12 minutes then immediately top each cookie with milk chocolate Hershy’s kisses.
- Press firmly so the cookie slightly cracks around the edges.
- Move to a cooling rack.
