Ingredients
  • 1 cup Urad dal
  • ¼ cup Onion (finely chopped)
  • ½ tsp Salt (or to taste )
  • ½ tsp Black pepper (coarsely ground )
  • 1 Green chili (finely chopped or to taste)
  • 2 tsps Ginger (crushed)
  • ¾ tsp Cumin seeds
  • 6 Curry leaves (finely chopped )
  • 1 tbsp Green coriander (finely chopped)
  • ⅛ tsp Asafoetida (hing)
  • Oil (for frying)
Instructions
  1. Wash and soak dal for 6 hours.
  2. Drain and grind dal to a smooth thick paste, use water as needed.
  3. Empty into a dish and stir vigorously to make a fluffy batter.
  4. Set aside a small bowl of cold water.
  5. To test, drop a little ball of batter in the water, it should float.
  6. Add the remaining ingredients in the batter, mix.
  7. Heat oil on medium-high heat.
  8. With wet hands, take a lime size ball of batter and flatten slightly. Make a hole in the center to create a doughnut.
  9. Gently place in hot oil and deep-fry until evenly browned and cooked.
  10. Remove and drain on a paper towel.
