Mendu Vada
Ingredients
- 1 cup Urad dal
- ¼ cup Onion (finely chopped)
- ½ tsp Salt (or to taste )
- ½ tsp Black pepper (coarsely ground )
- 1 Green chili (finely chopped or to taste)
- 2 tsps Ginger (crushed)
- ¾ tsp Cumin seeds
- 6 Curry leaves (finely chopped )
- 1 tbsp Green coriander (finely chopped)
- ⅛ tsp Asafoetida (hing)
- Oil (for frying)
Instructions
- Wash and soak dal for 6 hours.
- Drain and grind dal to a smooth thick paste, use water as needed.
- Empty into a dish and stir vigorously to make a fluffy batter.
- Set aside a small bowl of cold water.
- To test, drop a little ball of batter in the water, it should float.
- Add the remaining ingredients in the batter, mix.
- Heat oil on medium-high heat.
- With wet hands, take a lime size ball of batter and flatten slightly. Make a hole in the center to create a doughnut.
- Gently place in hot oil and deep-fry until evenly browned and cooked.
- Remove and drain on a paper towel.
