Filling
Ingredients
  • 2 cups Fresh coconut (peeled - finely grated)
  • 1 cup Mashed potato (2 medium potatoes)
  • ½ cup Green coriander (finely minced)
  • 1 cup Sev (spicy - grounded)
  • 2 tbsps Lemon juice
  • 1 tsp Ground cumin
  • 2 tbsps Raisins (chopped)
  • 1 tsp Sesame seeds
  • 1½ tsp salt (or to taste)
  • 2 tbsps Sugar
  • 1 tsp Garlic (crushed)
  • 1 tsp Green chilies (crushed - or to taste)
  • 2 tbsps Pomegranate seeds (optional)
Instructions
  1. Mix all the filling ingredients, divide into 20 equal portions and make firm balls. Set aside.
Crust
Ingredients
  • 2 cups Mashed potatoes (4 medium potatoes)
  • 2 tbsps All purpose flour
  • 2 tbsps Corn starch
  • ¾ tsp Salt
  • Oil (for frying)
Instructions
  1. Mix crust ingredients. It should not be sticky, add more cornstarch if needed.
  2. Divide dough into 20 equal balls.
  3. Place one crust ball on the palm of hand, flatten to a two inch round circle.
  4. Place one prepared filling ball in the center and seal by bringing edges together. Gently roll between your hands to form a smooth round ball. Repeat with remaining balls.
  5. Deep-fry in heated oil, on medium heat, until golden brown.
  6. Drain on a paper towel.
