Fried Dhokri

Ingredients
- 1 cup Rice flour
- ½ cup Jowar flour
- ¼ cup Gram flour
- 1½ cup Water
- 2 tbsps Oil
- 1 tsp Green chillies (crushed - to taste)
- 1 tsp Ginger (crushed)
- ½ tsp Garlic (crushed)
- 1 cup Green tuvar (boiled, lightly flatten with a masher)
- 1 tsp Salt (or to taste)
- 1 tsp Ground coriander/cumin mix
- 1 tbsp Sugar
- ½ tsp Cumin seeds
- ½ tsp Turmeric
- 1 tsp Peanuts (raw - ground)
- 1 tsp Sesame seeds
- Oil (for frying)
Instructions
- Mix the flours together in a bowl.
- Heat water in a large saucepan, add all the ingredients and stir.
- As it boils, carefully add the flour and mix well,
- Make sure there are no lumps.
- Cook covered on low heat, stir often.
- The mixture should form a soft dough when all the water is absorbed and the dough is cooked (about 25 minutes),
- Empty into a wide dish, let cool to warm.
- Knead dough to smooth.
- Divide into 25 equal size balls and flatten between hands to form 2 inch discs.
- Deep-fry in hot oil over medium heat until golden brown and crisp.
- Remove and drain on a paper towel.
