Semolina Sandwich
Ingredients
- ¾ cup Semolina
- ¼ tsp Salt
- ⅓ cup Plain yogurt
- ⅓ cup Water
- 1 cup Mashed potato (2 medium potatoes)
- ½ tsp Salt (or to taste)
- ¼ tsp Red chili powder (or to taste)
- ½ tsp Ground cumin
- ½ tsp Green chilies (crushed)
- 1 tsp Ginger (crushed)
- 1 tbsp Dry curry leaves (crumbled)
- ¼ cup Green coriander (finely chopped)
- Oil (for cooking)
- 1 tsp Eno (fruit salt)
- Sesame seeds (as needed)
Instructions
- Mix semolina, salt, yogurt and water.
- Cover and set the batter aside for 30 minutes.
- In a bowl, prepare the filling.
- Combine the mashed potatoes with the remaining ingredients, except Eno and sesame seeds, and set aside.
- Prepare and heat a dhokla steamer.
- Grease a deep 8 inch round or square dish.
- Add water as needed to the batter to make a thick pouring consistency, mix vigorously.
- Divide batter into two.
- Add ½ tsp Eno to one half and pour into the prepared dish, spread evenly.
- Steam on high heat for 5 minutes and remove to cool for a couple of minutes.
- Spread the filling evenly on top.
- Add ½ tsp Eno to the remaining batter and pour over the filling, spreading evenly.
- Steam for 10 minutes.
- Remove and cool.
- Cut into large squares or triangles.
- Heat and grease a frypan on medium heat, sprinkle sesame seeds and place sandwiches on top. Lightly toast on both sides.
