Ingredients
  • ¾ cup Semolina
  • ¼ tsp Salt
  • ⅓ cup Plain yogurt
  • ⅓ cup Water
  • 1 cup Mashed potato (2 medium potatoes)
  • ½ tsp Salt (or to taste)
  • ¼ tsp Red chili powder (or to taste)
  • ½ tsp Ground cumin
  • ½ tsp Green chilies (crushed)
  • 1 tsp Ginger (crushed)
  • 1 tbsp Dry curry leaves (crumbled)
  • ¼ cup Green coriander (finely chopped)
  • Oil (for cooking)
  • 1 tsp Eno (fruit salt)
  • Sesame seeds (as needed)
Instructions
  1. Mix semolina, salt, yogurt and water.
  2. Cover and set the batter aside for 30 minutes.
  3. In a bowl, prepare the filling.
  4. Combine the mashed potatoes with the remaining ingredients, except Eno and sesame seeds, and set aside.
  5. Prepare and heat a dhokla steamer.
  6. Grease a deep 8 inch round or square dish.
  7. Add water as needed to the batter to make a thick pouring consistency, mix vigorously.
  8. Divide batter into two.
  9. Add ½ tsp Eno to one half and pour into the prepared dish, spread evenly.
  10. Steam on high heat for 5 minutes and remove to cool for a couple of minutes.
  11. Spread the filling evenly on top.
  12. Add ½ tsp Eno to the remaining batter and pour over the filling, spreading evenly.
  13. Steam for 10 minutes.
  14. Remove and cool.
  15. Cut into large squares or triangles.
  16. Heat and grease a frypan on medium heat, sprinkle sesame seeds and place sandwiches on top. Lightly toast on both sides.
