Kand (Ratalu) or Potato Sandwich

Ingredients
- 2 lbs Kand (substitute potatoes)
- ½ cup Coconut (peel and finely grate or chop)
- ⅓ cup Roasted skinless peanuts (coarsely crushed)
- ¾ cup Green coriander (finely chopped)
- 2 tsps Green chilies (crushed to taste)
- 1 tsp Garlic (crushed)
- ½ tsp Ginger (crushed)
- 1 tbsp Ground coriander/cumin mix
- ½ tsp Salt (or to taste)
- 1½ tsp Sugar
- 2 tsps Sesame seeds
- 2 tsps Lemon juice
- 2 tsps Oil
Instructions
- Peel the kand and cut 20, ⅛ inch thick slices. Place in a bowl of water.
- Combine all the ingredients for filling.
- Prepare and heat a steamer, grease the perforated tray.
- Lightly sprinkle salt on the tray.
- Take a slice of kand, spread a thick layer of the filling and cover with another slice to make a sandwich.
- Make all and arrange in the tray, lightly sprinkle salt on top.
- Can layer if necessary.
- Sprinkle any leftover filling on top of the sandwiches.
- Steam on medium high heat for 15 minutes or until the kand is cooked.
- Turn heat off and gently lift sandwiches and place on a serving plate.
