Ingredients
  • 1 cup Roti (wheat flour)
  • 1 tbsp Semolina
  • 2 tbsps Melted ghee
  • ¾ tsp Salt (or to taste)
  • ½ tsp Sugar
  • ½ tsp Red chili powder (or to taste)
  • ¾ tsp Ground cumin
  • 1 tsp Ajmo
  • ¼ tsp Turmeric
  • 1 tsp Sesame seeds (optional)
  • ½ tsp Green chilies (crushed to taste)
  • ¼ tsp Garlic (crushed)
  • Oil (for frying)
Instructions
  1. In a deep bowl, mix flour and semolina. Pour melted ghee and rub.
  2. Incorporate the remaining ingredients and make a semi-firm dough using lukewarm water.
  3. Knead well, cover and set aside for 20 minutes.
  4. Divide into 12 equal little balls, flatten between hands and roll 3 inch round puris.
  5. Keep covered with a kitchen towel.
  6. Heat oil on medium high heat.
  7. Deep-fry puris, a few at a time.
  8. Press puris carefully with a skimmer to help puff.
  9. Fry until golden on both sides.
  10. Remove and drain on a paper towel.
