Ingredients
  • 2 cups Roti flour (wheat flour)
  • 1 tbsp Oil
  • 2 cups Mashed potatoes (4 medium potatoes)
  • 2 tsps Ground coriander/cumin mix
  • 1½ tsp Salt (or to taste)
  • 1 tsp Sugar
  • ½ tsp Amchur powder
  • 1 tsp Cumin seeds
  • ½ tsp Turmeric
  • 1½ tsp Green chilies (crushed to taste)
  • ½ tsp Ginger (crushed)
  • ½ tsp Garlic (crushed)
  • ¼ cup Green coriander (finely chopped)
  • Flour (for dusting)
  • Oil (for cooking)
Instructions
  1. Rub flour and oil together.
  2. Combine all the remaining ingredients in the flour to make a pliable dough.
  3. Divide into12 equal balls.
  4. Roll thick round parathas (about 5 inch diameter), using flour for dusting.
  5. Heat frying pan on medium heat and cook paratha.
  6. Drizzle oil around the edges to help roast.
  7. Flip a few times to cook evenly.
  8. Repeat with the remainder of the dough.
