Aloo Paratha (without stuffing)

Ingredients
- 2 cups Roti flour (wheat flour)
- 1 tbsp Oil
- 2 cups Mashed potatoes (4 medium potatoes)
- 2 tsps Ground coriander/cumin mix
- 1½ tsp Salt (or to taste)
- 1 tsp Sugar
- ½ tsp Amchur powder
- 1 tsp Cumin seeds
- ½ tsp Turmeric
- 1½ tsp Green chilies (crushed to taste)
- ½ tsp Ginger (crushed)
- ½ tsp Garlic (crushed)
- ¼ cup Green coriander (finely chopped)
- Flour (for dusting)
- Oil (for cooking)
Instructions
- Rub flour and oil together.
- Combine all the remaining ingredients in the flour to make a pliable dough.
- Divide into12 equal balls.
- Roll thick round parathas (about 5 inch diameter), using flour for dusting.
- Heat frying pan on medium heat and cook paratha.
- Drizzle oil around the edges to help roast.
- Flip a few times to cook evenly.
- Repeat with the remainder of the dough.
