Cracked Wheat Upma
Ingredients
- 1 cup Cracked wheat (lapsi)
- ¼ cup Green peas
- ¼ cup Carrots (finely cubed)
- ¼ cup Green beans (cut in small pieces)
- 1 tsp Salt (or to taste)
- 2 tsps Ginger (crushed)
- 2 Green chilies (sliced lengthwise)
- 1 tsp Lemon juice
- 1½ cup Hot water
Instructions
- Wash lapsi.
- In a saucepan, do the tempering on medium heat.
- Heat oil. Add remaining tempering ingredients and stir for 20 seconds, add the vegetables and lapsi.
- Sauté until golden in color then add hot water, salt, chilies, ginger, lemon juice and stir.
- Cover and cook on low heat, stirring frequently until all the water is absorbed and lapsi is soft and cooked.
- Add more hot water if needed to help to cook.
- Garnish and remove from heat.
Temoering
Ingredients
- 3 tbsps Oil
- ½ tsp Cumin seeds
- 2 Cinnamon sticks (1 inch)
- 4 Cloves
- ½ tsp Whole black peppercorns
- 1 Bay leaf
- ⅛ tsp Turmeric
- ⅛ tsp Asafoetida (hing)
- Green coriander (finely chopped for garnishing)
