Ingredients
  • 1 cup Cracked wheat (lapsi)
  • ¼ cup Green peas
  • ¼ cup Carrots (finely cubed)
  • ¼ cup Green beans (cut in small pieces)
  • 1 tsp Salt (or to taste)
  • 2 tsps Ginger (crushed)
  • 2 Green chilies (sliced lengthwise)
  • 1 tsp Lemon juice
  • 1½ cup Hot water
Instructions
  1. Wash lapsi.
  2. In a saucepan, do the tempering on medium heat.
  3. Heat oil. Add remaining tempering ingredients and stir for 20 seconds, add the vegetables and lapsi.
  4. Sauté until golden in color then add hot water, salt, chilies, ginger, lemon juice and stir.
  5. Cover and cook on low heat, stirring frequently until all the water is absorbed and lapsi is soft and cooked.
  6. Add more hot water if needed to help to cook.
  7. Garnish and remove from heat.

Ingredients
  • 3 tbsps Oil
  • ½ tsp Cumin seeds
  • 2 Cinnamon sticks (1 inch)
  • 4 Cloves
  • ½ tsp Whole black peppercorns
  • 1 Bay leaf
  • ⅛ tsp Turmeric
  • ⅛ tsp Asafoetida (hing)
  • Green coriander (finely chopped for garnishing)
