Ingredients
  • 1 cup Thick pauva
  • 1 medium Potato (peeled and cubed small)
  • 1 tsp Ground coriander/cumin mix
  • ¾ tsp Salt (or to taste)
  • 1½ tsp Sugar
  • 1 tsp Green chilies (crushed to taste)
  • 1 tsp Ginger (crushed)
  • 2 tbsps Raw peanuts
  • 1 tsp Sesame seeds
  • 2 tsps Lemon juice
  • 6 Golden raisins
Instructions
  1. Steam the potatoes.
  2. Wash and soak pauva for 5 minutes, then empty into a strainer.
  3. Press lightly to remove excess water.
  4. Let dry for a couple of minutes then empty into a dish.
  5. Combine all the ingredients in pauva except potatoes, peanuts, sesame seeds and raisins, mix.
  6. In a frypan, do the tempering on medium heat.
  7. Heat oil, add mustard and cumin seeds. When crackled add turmeric, hing, and curry leaves.
  8. Add potatoes, sesame seeds, and raisins, stir. The raisins will puff up. sprinkle a little salt, stir for a minute then add the pauva.
  9. Sprinkle a little salt, stir for a minute then add the pauva.
  10. Cook covered on low heat for a couple of minutes to thoroughly heat.
  11. Remove from heat and serve.
  12. Add green coriander and coconut, mix.
Tempering
Ingredients
  • 3 tbsps Oil
  • ½ tsp Mustard seeds
  • ½ tsp Cumin seeds
  • ¼ tsp Turmeric
  • ⅛ tsp Asafoetida (hing)
  • 8 Curry leaves
  • ¼ cup Green coriander (chopped for garnishing)
  • 1 tbsp Grated coconut
