Spinach Potato Puri

Ingredients
- 1½ cup Roti / wheat flour
- ½ cup Gram flour
- 1 tbsp Oil
- 1 cup Mashed potato (2 medium potatoes)
- 4 tbsps Spinach purée
- ½ tsp Green chilies (crushed to taste)
- ½ tsp Garlic (crushed)
- 1 tsp Salt (or to taste)
- ½ tsp Cumin seeds
- ½ tsp Ajmo
- ¼ tsp Turmeric
- 1 tsp Sesame seeds
- Oil (for frying)
Instructions
- Mix flours and oil and rub.
- Mix all the remaining ingredients and make a firm dough using little water.
- Divide dough into 25 small balls, flatten and roll 3 inch diameter round puris.
- Sprinkle all purpose flour if needed to help roll.
- Heat oil on medium high.
- Carefully place one puri in oil, gently press with a skimmer to help puff, then add another puri.
- Deep-fry a few at a time until light golden in color.
- Remove and drain on a paper towel.
