Ingredients
  • 1½ cup Roti / wheat flour
  • ½ cup Gram flour
  • 1 tbsp Oil
  • 1 cup Mashed potato (2 medium potatoes)
  • 4 tbsps Spinach purée
  • ½ tsp Green chilies (crushed to taste)
  • ½ tsp Garlic (crushed)
  • 1 tsp Salt (or to taste)
  • ½ tsp Cumin seeds
  • ½ tsp Ajmo
  • ¼ tsp Turmeric
  • 1 tsp Sesame seeds
  • Oil (for frying)
Instructions
  1. Mix flours and oil and rub.
  2. Mix all the remaining ingredients and make a firm dough using little water.
  3. Divide dough into 25 small balls, flatten and roll 3 inch diameter round puris.
  4. Sprinkle all purpose flour if needed to help roll.
  5. Heat oil on medium high.
  6. Carefully place one puri in oil, gently press with a skimmer to help puff, then add another puri.
  7. Deep-fry a few at a time until light golden in color.
  8. Remove and drain on a paper towel.
