Ingredients
  • 2 cups Idada flour
  • 3 tbsps Oil
  • ½ cup Plain yogurt
  • 1 tsp Green chilies (crushed to taste)
  • 2 tsps Ginger (crushed)
  • ½ tsp Garlic (crushed)
  • 1½ tsp Salt (or to taste)
  • 1 tsp Sugar
  • ½ tsp Cumin seeds
  • ⅛ tsp Turmeric
  • ⅛ tsp Fenugreek powder (optional)
  • 1 tsp Eno (fruit salt)
  • Sesame seeds
Instructions
  1. In a large bowl, combine idada flour and oil and rub until it feels crumbly.
  2. Add the remaining ingredients, except sesame seeds and Eno, mix.
  3. Pour about 1½ C hot water, stir vigorously to make a thick runny batter.
  4. Add more water as needed.
  5. Cover and ferment in a warm place for at least 8 hours or overnight.
  6. Prepare and heat a dhokla steamer on high. Grease 2-8 inch dhokla plates.
  7. Sprinkle Eno in the batter and thoroughly mix, stirring in one direction to aerate.
  8. Pour batter in plates equally and evenly.
  9. Sprinkle sesame seeds on top.
  10. Steam on high heat for 25 minutes.
  11. Remove and cool slightly before cutting to desired size diamond shapes.
  12. Note : you can also sprinkle chopped green coriander, grated coconut or red chili powder along with sesame seeds.
