Semolina Crust Samosa

Ingredients
- Samosa filling (see recipe under samosa)
- 1½ cup Water
- 1 tbsp Oil
- ¾ tsp Salt
- ½ tsp Kalonji
- ½ tsp Red chili flakes
- 1 cup Semolina
- 2 tbsps Rice flour
- Oil (for frying)
Instructions
- In a saucepan, bring water to a boil.
- Add oil and the spices, stir and lower heat.
- Gradually add the semolina, stir continuously making sure there are no lumps. Stir until a dough is formed.
- Turn the heat off, cover and let rest for 5 minutes.
- Empty into a bowl, add rice flour and knead well.
- Divide dough into 15 equal balls.
- Place a ball between two pieces of plastic and flatten thin.
- Place some filling on the puri, gently fold and seal into a triangle shape.
- Repeat with the remaining balls.
- Remove and drain on a paper towel.
- Add oil and the spices, stir and lower heat.
