Ingredients
  • Samosa filling (see recipe under samosa)
  • 1½ cup Water
  • 1 tbsp Oil
  • ¾ tsp Salt
  • ½ tsp Kalonji
  • ½ tsp Red chili flakes
  • 1 cup Semolina
  • 2 tbsps Rice flour
  • Oil (for frying)
Instructions
  1. In a saucepan, bring water to a boil.
  2. Add oil and the spices, stir and lower heat.
  3. Gradually add the semolina, stir continuously making sure there are no lumps. Stir until a dough is formed.
  4. Turn the heat off, cover and let rest for 5 minutes.
  5. Empty into a bowl, add rice flour and knead well.
  6. Divide dough into 15 equal balls.
  7. Place a ball between two pieces of plastic and flatten thin.
  8. Place some filling on the puri, gently fold and seal into a triangle shape.
  9. Repeat with the remaining balls.
  10. Remove and drain on a paper towel.
  11. Add oil and the spices, stir and lower heat.
