Ingredients
1 cup
Roti flour
2 Tbsps
Oil
½ tsp
Salt
(or to taste)
Butter
Instructions

Mix all ingredients and make soft, rollable dough, using water.

Cover and let rest for 15 minutes.

Smooth the dough with ½ tsp of oil and knead.

Make 8 equal size balls and roll thin round circles (use flour for dusting, roll thinner than roti).

On low heat, roast rotis on tawa or frypan, turning once (just until they don’t look raw).

Remove from heat, butter and stack. Let cool.

Heat tava on low, and roast each roti again. Pressing firmly with a towel to make crisp and golden on both sides.

*Do not let it bubble.

Let khakhra cool, then stack and store.

Variations: You may add different flavors such as : finely chopped green fenugreek; cumin seeds; caraway seeds; crushed black pepper; red chili powder or flakes; green chili paste; ginger with green coriander; etc. You can also add cocoa powder and sugar for chocolate flavor.
