Chora Fari
Ingredients
1 cup
Besan
(sifted)
½ cup
Urad flour
¼ tsp
Baking powder
½ tsp
Sanchoro
¾ tsp
Salt
⅓ cup
Water
⅓ tsp
Sugar
¼ tsp
Asafoetida
(hing)
½ tsp
White chili powder
Oil
(for frying)
Instructions

In a saucepan, add sanchoro and salt to ⅓ cup of water and boil for 5 minutes.

Remove from heat and let cool to warm.

Strain only if there is residue settled.

Add sugar and stir and set water aside.

In a bowl, mix both flours.

Sift the baking powder in the flour.

Add asafoetida and chili powder, mix.

Using prepared water, make a stiff dough.

Knead until smooth (grease hands if necessary).

Make 15 small balls and roll very thin circles about 5 inch diameter (with the help of a little oil if needed).

Place each circle on a table cloth and let dry for 15 minutes.

With the back of a knife, make cuts about an 1 inch wide, on the circles, do not cut through.

Fry on medium high heat.

Remove and drain on a paper towel.

Black salt

Mix ingredients and sprinkle on chora fari.

Break on the cuts, into strips to store.
