Vegetable Jalfrezi
Ingredients
- 2 tbsps Butter
- 10 Raw cashews (halved)
- ½ tsp Salt (or to taste)
- 1 cup Bell peppers (assorted colors, sliced)
- ¼ cup Carrots (cut 1 inch thick chunks)
- ¼ cup Green beans (french cut)
- ¼ cup Green peas
- ¼ cup Cauliflower (florets)
Instructions
- Melt butter in a frypan on medium heat, add the vegetables, cashews and salt.
- Stir fry for a couple of minutes, keep crunchy.
- Remove from heat, set aside.
Gravy
Ingredients
- 2 tbsps Oil
- 1 tsp Cumin seeds
- 1 cup Onion (chopped)
- 1 cup Tomatoes (chopped)
- 4 cloves Garlic (chopped)
- 2 tbsps Ginger (grated)
- ½ tsp Green chilies (crushed)
- ½ tsp Salt (or to taste)
- ½ tsp Red chili powder
- ½ tsp Garam masala
- 1 tsp Kasuri methi
- 2 tbsps Cream
- Green coriander (finely chopped, for garnish)
Instructions
- Heat oil in a saucepan on medium heat.
- Add cumin seeds then onions, stir.
- Add salt, garlic and ginger, cook until slightly browned.
- Add tomatoes and cook until soft and mushy.
- Add the chilies, salt, chili powder, garam masala and kasuri methi.
- Stir, lower heat and simmer for 5 minutes.
- Add ½ cup of water and the cream, blend smooth with a hand blender.
- Add the prepared vegetables, mix and simmer for 5 minutes.
- Note: Any preferred vegetables can be added.
