Ingredients
  • 2 tbsps Butter
  • 10 Raw cashews (halved)
  • ½ tsp Salt (or to taste)
  • 1 cup Bell peppers (assorted colors, sliced)
  • ¼ cup Carrots (cut 1 inch thick chunks)
  • ¼ cup Green beans (french cut)
  • ¼ cup Green peas
  • ¼ cup Cauliflower (florets)
Instructions
  1. Melt butter in a frypan on medium heat, add the vegetables, cashews and salt.
  2. Stir fry for a couple of minutes, keep crunchy.
  3. Remove from heat, set aside.
Gravy
Ingredients
  • 2 tbsps Oil
  • 1 tsp Cumin seeds
  • 1 cup Onion (chopped)
  • 1 cup Tomatoes (chopped)
  • 4 cloves Garlic (chopped)
  • 2 tbsps Ginger (grated)
  • ½ tsp Green chilies (crushed)
  • ½ tsp Salt (or to taste)
  • ½ tsp Red chili powder
  • ½ tsp Garam masala
  • 1 tsp Kasuri methi
  • 2 tbsps Cream
  • Green coriander (finely chopped, for garnish)
Instructions
  1. Heat oil in a saucepan on medium heat.
  2. Add cumin seeds then onions, stir.
  3. Add salt, garlic and ginger, cook until slightly browned.
  4. Add tomatoes and cook until soft and mushy.
  5. Add the chilies, salt, chili powder, garam masala and kasuri methi.
  6. Stir, lower heat and simmer for 5 minutes.
  7. Add ½ cup of water and the cream, blend smooth with a hand blender.
  8. Add the prepared vegetables, mix and simmer for 5 minutes.
  9. Note: Any preferred vegetables can be added.
