Ingredients
  • 2 cups Moong beans sprouts (recipe under "miscellaneous")
  • ¼ cup Onion (chopped, optional)
  • 1½ tsp Ground coriander/cumin mix
  • 1 tsp Salt (or to taste)
  • ¼ tsp Sugar
  • ½ tsp Green chilies (crushed, or to taste)
  • ½ tsp Ginger (crushed)
  • ½ tsp Garlic (crushed)
  • 1 tsp Lemon juice
  • ¼ cup Green onions (chopped, for garnish)
  • Green chilies (chopped, for serving)
  • Oil (for serving)
Instructions
  1. In a pressure cooker, heat oil on medium for tempering, add dry red chilies.
  2. As it browns, add the mustard seeds.
  3. Once crackled add turmeric and hing then add chopped onions (optional).
  4. Sauté for 1 minute, add sprouts and seasonings, mix well.
  5. Add ¼ cup of water and pressure cook for 2 whistles (2 minutes in IP).
  6. Turn off the heat, let cool then open.
  7. Add chopped green onions and mix.
  8. When serving, drizzle some oil and sprinkle some chopped green chilies.

  • 2 whole Dry red chilies
  • ¾ tsp Mustard seeds
  • ¼ tsp Turmeric
  • ⅛ tsp Asafoetida (hing)
