Guvar/Green Beans
Ingredients
- 1 lb Guvar
- 1 cup Sliced onion
- 2 tsps Ground coriander/cumin mix
- 1 tsp Salt (or to taste)
- ½ tsp Green chilies (crushed, to taste )
- ¾ tsp Garlic (crushed)
- ¼ tsp Ginger (crushed)
- ½ tsp Sugar
- ¼ cup Water
Instructions
- Trim ends of guvar and cut into 1 1⁄2 inch pieces, wash.
- In a saucepan heat oil on medium high for tempering.
- Add mustard seeds and ajmo.
- When crackled add turmeric and hing then guvar and onions.
- Stir, then add the remaining ingredients and mix well.
- Add water, cover and cook on low-medium heat until done, stirring occassionally.
- Shaak should be soft when cooked without gravy.
- Can pressure cook for 3 whistles.
Tempering
Ingredients
- 3 tbsps Oil
- ½ tsp Mustard seeds
- ¾ tsp Ajmo
- ½ tsp Turmeric
- ⅛ tsp Asafoetida (hing)
Variation
Ingredients
- Green beans (sliced french style)
- ¼ cup Green coriander (chopped)
Instructions
- Replace guvar with green beans and add green coriander.
