Ingredients
  • 2 medium Potatoes (peeled and sliced like fries, medium thick)
  • 2 tbsps Oil
  • 3 tbsps Raw cashews (broken)
  • ½ tsp Cumin seeds
  • 1 tsp Sesame seeds
  • ½ tsp Turmeric
  • 1 tsp Red chili powder (or to taste)
  • 8 Curry leaves
  • ½ tsp Salt (or to taste)
  • ½ tsp Sugar
  • ¼ tsp Garlic powder (optional)
  • 1 tsp Lemon juice
  • Green onions (finely chopped, for garnish)
  • Oil (for frying)
Instructions
  1. Soak potatoes in cold water for ½ hour.
  2. Drain and pat dry with a towel, deep-fry untill crispy and light brown.
  3. Drain on a paper towel.
  4. Heat oil on medium in a frypan, add cashews.
  5. Sauté until the color begins to change.
  6. Add sesame seeds, cumin seeds, turmeric, chili powder and curry leaves.
  7. Stir for a minute then add the fried potatoes, salt, sugar, garlic powder and lemon juice.
  8. Toss and mix well.
  9. Cook for a couple of minutes until heated through.
  10. Sprinkle green onions.
