Note: Peel and cut a piece from each turya and taste it. If it’s bitter, discard it.
Ingredients
  • 2 cups Turiya (peeled and cubed)
  • ¼ cup Black eye peas (chori)
  • 1 tsp Ground coriander/cumin mix
  • ½ tsp Salt (or to taste)
  • ¼ tsp Sugar
  • ½ tsp Green chilies (crushed, to taste)
  • ½ tsp Ginger (crushed)
  • ½ tsp Garlic (crushed)
Instructions
  1. In a pressure cooker, heat oil on medium high.
  2. Add cloves, mustard seeds and ajmo.
  3. When crackled, add turmeric, hing then vegetables.
  4. Stir, add the seasonings and mix thoroughly.
  5. Do not add water in the pressure cooker.
  6. Cover and pressure cook for 3 whistles.
  7. Simmer uncovered if there’s too much liquid.

  • 4 Cloves
  • ½ tsp Mustard seeds
  • ½ tsp Ajmo
  • ¼ tsp Turmeric
  • ⅛ tsp Asafoetida (hing)
