Anaheim peppers

Gram flour

Tamarind paste
(substitute - lemon juice)

Ground coriander/cumin mix
⅛ tsp
Asafoetida

(or to taste)

(or to taste)

Garlic
(crushed)
2 Tbsps
Ground peanuts
(roasted)

Instructions

Wash and slit peppers from stem to tip and deseed.

In a frying pan, heat 2 tbsp oil on low heat, add the gram flour and continuously stir until the color begins to change.

Add tamarind, mix and remove from the heat.

Combine the rest of the ingredients with the flour, except oil, mix thoroughly.

Stuff peppers with the mixture.

Heat the remaining oil in the frying pan and place the peppers and cook uncovered on low heat.

Turn peppers occasionally to cook evenly. Cook until tender and slightly charred.

Remove and let cool.
