Ingredients
  • 8 oz Anaheim peppers
  • 4 tbsps Oil
  • ⅓ cup Gram flour
  • ½ tsp Tamarind paste (substitute - lemon juice)
  • 1 tsp Ground coriander/cumin mix
  • ⅛ tsp Asafoetida (hing)
  • 1 tsp Salt (or to taste)
  • 2 tsps Sugar
  • ¼ tsp Chili powder (or to taste)
  • ¾ tsp Garlic (crushed)
  • 2 tbsps Ground peanuts (roasted)
  • ¼ tsp Turmeric
Instructions
  1. Wash and slit peppers from stem to tip and deseed.
  2. In a frying pan, heat 2 tbsp oil on low heat, add the gram flour and continuously stir until the color begins to change.
  3. Add tamarind, mix and remove from the heat.
  4. Combine the rest of the ingredients with the flour, except oil, mix thoroughly.
  5. Stuff peppers with the mixture.
  6. Heat the remaining oil in the frying pan and place the peppers and cook uncovered on low heat.
  7. Turn peppers occasionally to cook evenly. Cook until tender and slightly charred.
  8. Remove and let cool.
