Stuffed Anaheim Peppers
Ingredients
- 8 oz Anaheim peppers
- 4 tbsps Oil
- ⅓ cup Gram flour
- ½ tsp Tamarind paste (substitute - lemon juice)
- 1 tsp Ground coriander/cumin mix
- ⅛ tsp Asafoetida (hing)
- 1 tsp Salt (or to taste)
- 2 tsps Sugar
- ¼ tsp Chili powder (or to taste)
- ¾ tsp Garlic (crushed)
- 2 tbsps Ground peanuts (roasted)
- ¼ tsp Turmeric
Instructions
- Wash and slit peppers from stem to tip and deseed.
- In a frying pan, heat 2 tbsp oil on low heat, add the gram flour and continuously stir until the color begins to change.
- Add tamarind, mix and remove from the heat.
- Combine the rest of the ingredients with the flour, except oil, mix thoroughly.
- Stuff peppers with the mixture.
- Heat the remaining oil in the frying pan and place the peppers and cook uncovered on low heat.
- Turn peppers occasionally to cook evenly. Cook until tender and slightly charred.
- Remove and let cool.
