Lemon Pickle
Ingredients
- 3 Lemons (cut into 12 pieces)
- 2 tsps Salt
- 1 tsp Red chili powder
- 1 tsp Turmeric
- 2 tsps Ground coriander/cumin mix
- 1¼ tsp Sugar
- ⅓ cup Water
- ½ tsp Asafoetida (hing)
Instructions
- Rub lemon pieces with1 tsp salt and ½ tsp turmeric. Let marinate in a covered container for 2 months. Toss daily.
- Then rinse in a strainer and steam, keeping pieces separate.
- Combine sugar and water, boil for about 10 minutes.
- Remove from heat, add lemons, let cool to warm.
- Mix the remaining ingredients, cool completely and store in an airtight container.
