Ingredients
  • Rajapur mangoes (raw)
  • Salt
  • Turmeric
  • Athana Masala
  • Peanut oil
Instructions
  1. Wipe and cut mangoes into desired size cubes.
  2. Rub salt and turmeric all over and let marinate for 2 days, tossing twice daily.
  3. Then spread a cloth sheet on a table and place cubes on it, making sure each cube is separated. Dry for 2 days.
  4. Mix with athana masala as much as desired.
  5. Fill in a glass jar, press down firmly.
  6. Bring some peanut oil to a boil, remove from the heat and let cool.
  7. Pour oil over the athana in the jar until the top is coated, which prevents molding.
