Besan Chutney
Ingredients
- ¼ cup Plain yogurt
- 1 cup Water
- ¼ tsp Turmeric
- ½ tsp Salt (or to taste)
- 1½ tsp Sugar
- 2 tsps Ginger (crushed)
- 2 tbsps Besan
- Lemon juice (to taste)

- Whisk together yogurt, water, turmeric, salt, sugar and ginger.

- 1 tbsp Oil
- ½ tsp Mustard seeds
- ⅛ tsp Asafoetida (hing)
- 5 Curry leaves
- 2 Green chilies (sliced round)
Instructions
- Do the tempering on medium heat. Add besan and stir continuously until the color begins to change and is aromatic.
- Lower the heat and gradually pour the yogurt mixture. Keep stirring with a whisk, gravy should be lump free.
- Add some lemon juice for desired sourness.
- Simmer until thickened like gravy, stir and remove from heat.
- You can also add citric acid for more sourness.
- Serve with khaman or fafda.
