Ingredients
  • Totapuri mangoes (turned slightly yellow)
  • Cardamom seeds
  • Cinnamon sticks
  • Cloves
  • Saffron strands
  • Sugar
  • Cumin seeds
  • Chili powder (optional)
Instructions
  1. Peel and grate the mangoes and weigh it.
  2. Add equal weight of sugar, mix and cover. Let stand until sugar is melted.
  3. Place in a heavy bottom saucepan and simmer on low heat until thickened enough to form one strand consistency.
  4. To test, place a small drop of syrup on a plate, touch with finger and slowly lift finger, a single strand should be visible.
  5. Add the remaining ingredients in desired quantity, stir and remove from heat.
  6. Let cool, store in an airtight container.
