Ingredients
  • Pocket bread
  • Falafel (recipe under"Snacks/Light Meals")
  • Tahini
  • Hummus
  • Green coriander chutney
  • Creamy salad dressing
  • Lettuce (chopped)
  • Onions (chopped)
  • Tomatoes (chopped)
  • Cucumber (sliced)
  • Bell peppers (mixed colors, chopped)
  • Refried beans
  • Salsa
  • Grated cheese
Instructions
  1. Cut pocket bread in half, warm for 15 seconds in the microwave, to help open the pocket.
  2. To serve: Option 1- Spread tahini or hummus all over the inside of the pocket bread.
  3. Fill with vegetables of your choice, place 3 falafels (can crumble falafel into salad) inside and drizzle salad dressing.
  4. Option 2- Spread green coriander chutney all over the inside of the pocket bread.
  5. Fill with vegetables of your choice, refried beans, falafel and salsa. Top with cheese.
