Pocket Bread
Ingredients
- Pocket bread
- Falafel (recipe under"Snacks/Light Meals")
- Tahini
- Hummus
- Green coriander chutney
- Creamy salad dressing
- Lettuce (chopped)
- Onions (chopped)
- Tomatoes (chopped)
- Cucumber (sliced)
- Bell peppers (mixed colors, chopped)
- Refried beans
- Salsa
- Grated cheese
Instructions
- Cut pocket bread in half, warm for 15 seconds in the microwave, to help open the pocket.
- To serve: Option 1- Spread tahini or hummus all over the inside of the pocket bread.
- Fill with vegetables of your choice, place 3 falafels (can crumble falafel into salad) inside and drizzle salad dressing.
- Option 2- Spread green coriander chutney all over the inside of the pocket bread.
- Fill with vegetables of your choice, refried beans, falafel and salsa. Top with cheese.
