Vada
Ingredients
  • 3 cups Mashed potatoes (4 medium potatoes)
  • 2 Green chilies (crushed, or to taste)
  • 1 tsp Ginger (crushed)
  • ½ tsp Garlic (crushed)
  • 2 tbsps Green coriander (finely chopped)
  • 1½ tsp Salt (or to taste)
  • ½ tsp Garam masala
  • ¼ tsp Turmeric
  • 2 tsps Lemon juice
Instructions
  1. In a large bowl, combine the vada ingredients.
  2. In a saucepan, heat oil on medium heat for the tempering.
  3. Add mustard seeds, when crackling add urad dal and curry leaves then add the prepared potatoes.
  4. Stir for a few minutes to incorporate the flavors.
  5. Remove from heat and let cool.
  6. Make 6 equal size balls.
  7. Heat oil for frying, on medium high.
  8. Dip each ball in the prepared batter and deep fry until golden.
  9. Remove and drain on a paper towel.
  10. In the same oil, lightly fry the green chilies.
  11. To assemble: Spread green chutney on one half of the bun, sprinkle garlic chutney.
  12. Place one vada, slightly flattened, on the bun.
  13. Spread tamarind chutney on the other half of the bun and place on top to make a sandwich.
  14. Serve with fried green chilies.
Tempering
Ingredients
  • 2 tbsps Oil
  • ½ tsp Mustard seeds
  • ½ tsp Urad dal
  • 6 Curry leaves
Batter
Ingredients
  • ¾ cup Gram flour
  • 2 tbsps Rice flour
  • ½ tsp Salt
  • ⅛ tsp Asafoetida (hing)
Instructions
  1. Mix batter ingredients with water to make a thick batter.
