Roast Potatoes

Ingredients
- 4 medium Potatoes (peeled and cut into small cubes)
- 3 medium Tomatoes (round cut slices)
- Salt (to taste)
- Ground black pepper (to taste)
- Butter (as needed)
- Chilies (crushed, optional)
- Bread (as needed)
Instructions
- Steam potatoes.
- Set the oven to “broil” function on medium.
- Grease a cookie tray with butter and spread the potatoes.
- Sprinkle some salt and pepper, sparsley place dollops of butter on the potatoes.
- On another greased tray, arrange sliced tomatoes.
- Sprinkle some salt and pepper, sparsley place dollops of butter.
- Broil the potatoes and tomatoes until roasted, stirring occasionally.
- Spread chilies on top of potatoes and tomatoes if desired.
- Serve with buttered bread.
- Note: Instead of fresh tomatoes, you can serve with heated canned Italian stewed tomatoes.
