Ingredients
  • 4 medium Potatoes (peeled and cut into small cubes)
  • 3 medium Tomatoes (round cut slices)
  • Salt (to taste)
  • Ground black pepper (to taste)
  • Butter (as needed)
  • Chilies (crushed, optional)
  • Bread (as needed)
Instructions
  1. Steam potatoes.
  2. Set the oven to “broil” function on medium.
  3. Grease a cookie tray with butter and spread the potatoes.
  4. Sprinkle some salt and pepper, sparsley place dollops of butter on the potatoes.
  5. On another greased tray, arrange sliced tomatoes.
  6. Sprinkle some salt and pepper, sparsley place dollops of butter.
  7. Broil the potatoes and tomatoes until roasted, stirring occasionally.
  8. Spread chilies on top of potatoes and tomatoes if desired.
  9. Serve with buttered bread.
  10. Note: Instead of fresh tomatoes, you can serve with heated canned Italian stewed tomatoes.
