Ingredients
  • 6 tbsps Butter
  • 1 tsp Cumin seeds
  • ¼ cup Green bell pepper (finely chopped)
  • ⅓ cup Onion (finely chopped)
  • 1 tsp Ginger (crushed)
  • 1 tsp Garlic (crushed)
  • ½ cup Tomatoes (finely chopped)
  • ¼ cup Cauliflower (finely chopped)
  • ¼ cup Carrots (grated)
  • 1 cup Mashed potatoes (2 medium potatoes)
  • ¼ cup Peas (boiled)
  • ½ tsp Red chili powder (or to taste)
  • ¼ tsp Turmeric
  • 1 tbsp Pav bhaji masala (or to taste)
  • 1 tsp Salt (or to taste)
  • 2 tsps Kasuri methi (dry fenugreek leaves)
  • ¼ cup Green coriander (finely chopped)
  • Water as needed
  • 4 Bread buns (for serving)
  • Butter (for serving)
  • Onions (finely chopped, for serving)
  • Green coriander (finely chopped,forserving )
  • Lemon wedges (for serving)
Instructions
  1. Heat a heavy bottom large skillet or wok on medium-high and melt 2 tbsp butter, add cumin seeds.
  2. When crackled add bell peppers, onions, ginger and garlic, stir-fry for a minute.
  3. Add tomatoes, cauliflower, carrots and ¼ cup of water.
  4. Stir and cook until the tomatoes are soft and mushy.
  5. Add potatoes, peas, chili powder, turmeric and 2 tbsp butter and ¼ cup water.
  6. Mash the vegetables with a masher.
  7. Add more water as needed to make a runny consistency.
  8. As it boils, add pav bhaji masala, salt, kasuri methi and green coriander and mix.
  9. Simmer on low heat for 5 minutes and remove from heat.
  10. In a fry pan, melt 2 tbsp butter, on medium heat.
  11. Add a little pav bhaji masala and chopped green coriander.
  12. Stir and rub bun slices to coat and let toast on both sides.
  13. To serve: place a ladleful of pav bhaji on a plate topped with a slice of butter.
  14. Sprinkle chopped green coriander.
  15. Place 2 bun slices, chopped onions, and a wedge of lemon alongside.
