Ingredients
  • 1 cup Cracked wheat (lapsi)
  • ¼ cup Green peas
  • ¼ cup Carrots (finely cubed)
  • ¼ cup Green beans (cut in small pieces)
  • 1 tsp Salt (or to taste)
  • 2 tsps Ginger (crushed)
  • 2 Green chilies (sliced lengthwise)
  • 1 tsp Lemon juice
  • 1½ cup Hot water
  • Green coriander (finely chopped for garnishing)
Instructions
  1. Wash lapsi.
  2. In a saucepan, do the tempering on medium heat.
  3. Heat oil. Add remaining tempering ingredients and stir for 20 seconds, add the lapsi.
  4. Sauté until golden in color then add the vegetables, salt, chilies, ginger, lemon juice and stir, add hot water.
  5. Cover and cook on low heat, stirring frequently until all the water is absorbed and lapsi is soft and cooked.
  6. Add more hot water if needed to help to cook.
  7. Garnish and remove from heat.

  • ½ tsp Cumin seeds
  • 2 Cinnamon sticks (1 inch)
  • 4 Cloves
  • ½ tsp Whole black peppercorns
  • 1 Bay leaf
  • ⅛ tsp Turmeric
  • ⅛ tsp Asafoetida (hing)
