Ingredients

Eggs
4 Tbsps
Cheese of your choice
(Grated)
3 Tbsps
Parmesan cheese
Salt & pepper
(to taste)
¼ tsp
Crushed red pepper
(substitute chopped green chilies to taste)
2 Tbsps
Fresh basil
(chopped or 1 tbsp dried)
¼ tsp
Garlic
(crushed)
2 Tbsps
Olive oil
Instructions

Adjust oven rack to upper middle position and preheat to 400°F.

In an ovenproof skillet, heat oil on medium high heat.

Add filling (see note), salt and pepper and sauté until lightly browned.

Add garlic and cook for a minute then set aside.

Meanwhile beat together eggs, cheese, herbs, chilies, salt and pepper.

Return skillet to the stove, shake to evenly spread the filling.

Pour egg mixture.

Do not stir.

Cook for about one minute on low heat until the edges start to set.

Transfer skillet to the oven and bake until puffed and set, about 10 minutes.

Remove from the oven and let sit for a couple of minutes.

Cut into wedges and serve.

Note: filling options: thinly sliced zucchini, tomatoes, colored peppers, onions, chopped spinach, steamed asparagus.
