Roasted Red Pepper Hummus
Ingredients
- 2 Red peppers (medium)
- 1 can Garbanzo beans (15oz/rinsed)
- 2 tbsps Tahini
- 1 tbsp Lemon juice
- 1 tbsp Olive oil
- ½ tsp Paprika
- ⅛ tsp Cayenne
- 1 tsp Crushed garlic
- ½ tsp Salt (or to taste)
Instructions
- Preheat oven 450°F
- Slice peppers, remove core and seeds.
- Line a baking tray with wax paper. Place slices skin up, roast for 25 minutes (skin should be charred).
- Remove into a bowl, cover with foil, let rest for 5 minutes then peel off the skin.
- Place in a food processor, along with the remaining ingredients and process to a smooth paste.
