Devilled Potato Bites
Ingredients
- 12 Baby white potatoes (washed and halved)
- 1 cup Garbanzo beans ( boiled or canned, rinsed)
- 1 tbsp Lemon juice
- 2 tbsps Tahini
- ¼ tsp Turmeric
- 1 tbsp Garlic powder
- 1 tsp Dijon mustard
- 2 tbsps Water
- Salt and Pepper (to taste)
- Paprika (for garnish)
- Chopped chives or green onions (for garnish)
Instructions
- Preheat oven 400°F
- Spray oil on a baking tray, sprinkle some salt and arrange potato halves, cut side down.
- Bake for 40 minutes, cool slightly, scoop out the center so that it looks like boiled eggs with yolk removed.
- In a food processor, add beans, scooped potato and the remaining ingredients, blend to a smooth paste.
- Fill paste in a pastry bag with a decorative tip, fill the potato shells and garnish.
