Ingredients
  • 12 Baby white potatoes (washed and halved)
  • 1 cup Garbanzo beans ( boiled or canned, rinsed)
  • 1 tbsp Lemon juice
  • 2 tbsps Tahini
  • ¼ tsp Turmeric
  • 1 tbsp Garlic powder
  • 1 tsp Dijon mustard
  • 2 tbsps Water
  • Salt and Pepper (to taste)
  • Paprika (for garnish)
  • Chopped chives or green onions (for garnish)
Instructions
  1. Preheat oven 400°F
  2. Spray oil on a baking tray, sprinkle some salt and arrange potato halves, cut side down.
  3. Bake for 40 minutes, cool slightly, scoop out the center so that it looks like boiled eggs with yolk removed.
  4. In a food processor, add beans, scooped potato and the remaining ingredients, blend to a smooth paste.
  5. Fill paste in a pastry bag with a decorative tip, fill the potato shells and garnish.
