Edamame Hummus
Ingredients
- 1 cup Edamame (shelled)
- 2 tbsps Flat leaf parsley (chopped)
- 1 tbsp Tahini
- 1 tbsp Lemon juice
- 2 Cloves of garlic
- ½ tsp Lemon zest
- 2 tbsps Olive oil
- Salt ( to taste)
Instructions
- In a microwave safe dish, place edamame in some salted water, microwave on high for 3 minutes. Drain.
- In a food processor, combine all the ingredients, except oil, and blend smooth.
- Add oil and mix.
