Ingredients
  • 4 Medium potatoes
  • Oil (for frying)
Instructions
  1. Wash and cut potatoes into wedges (do not peel).
  2. In a large saucepan, boil potatoes in salted water. Cook ¾ of the way, drain and dry on a paper towel.

  • ½ cup All purpose flour
  • 1 tbsp Dried mixed herbs
  • 1 tbsp Chili flakes
  • Salt (to taste)
Instructions
  1. Mix ingredients in a ziplock bag.
  2. Add potatoes to the seasoning, seal the bag and shake to coat properly. Remove wedges and place in another ziplock bag and freeze 3-4 hours.
  3. Deep-fry frozen wedges in hot oil. Serve warm.
Variation
  1. Bake uncooked, seasoned wedges, drizzled with oil in a 425°F heated oven until cooked.
