Shrikhand
Ingredients
4 cups
Plain yogurt
(full fat)
White sugar
Saffron
(soaked in milk - optional)
Ground cardamom
(for garnish)
Almonds
(sliced, for garnish)
Pistachios
(sliced, for garnish)
Instructions

Place yogurt on a fine weave cheesecloth, bring corners together and tie a knot. Hang overnight with a dish underneath to allow the whey to drip.

Next morning discard the whey and open the cheesecloth. A firm curd should be formed. Empty into a container.

For 1 cup of curd, add ⅔ cup of sugar, mix thoroughly and let rest, allowing the sugar to dissolve (a couple of hours). The texture should now be smooth.

Tie a cheesecloth very tightly on a dish, place sweet curd on it and using a spatula, strain curd through the cheesecloth.

Shrikhand is ready. Saffron can be added in the Shrikhand.

Refrigerate.

To serve : place shrikhand in individual bowls, sprinkle cardamom, almonds and pistachios.
