Khakhra

Ingredients
- 1 cup Roti flour
- 2 tbsps Oil
- ½ tsp Salt (or to taste)
- Butter
Instructions
- Mix all ingredients and make soft, rollable dough, using water.
- Cover and let rest for 15 minutes.
- Smooth the dough with ½ tsp of oil and knead.
- Make 8 equal size balls and roll thin round circles (use flour for dusting, roll thinner than roti).
- On low heat, roast rotis on tawa or frypan, turning once (just until they don’t look raw).
- Remove from heat, butter and stack. Let cool.
- Heat tava on low, and roast each roti again. Pressing firmly with a towel to make crisp and golden on both sides.
- *Do not let it bubble.
- Let khakhra cool, then stack and store.
Variations
- You may add different flavors such as : finely chopped green fenugreek; cumin seeds; caraway seeds; crushed black pepper; red chili powder or flakes; green chili paste; ginger with green coriander; etc.
- You can also add cocoa powder and sugar for chocolate flavor.
