Ingredients
  • 1 cup Besan (sifted)
  • 1 tbsp Oil
  • ¾ tsp Salt
  • ½ tsp Sugar
  • ¼ tsp Turmeric
  • ½ tsp White chili powder
  • ⅛ tsp Asafoetida (hing)
  • Oil (for frying)
Instructions
  1. In a bowl, mix oil in the besan then add the remaining ingredients and make a soft dough using cold water.
  2. Keep kneading until the dough is smooth and lighter in color.
  3. Wet hands occasionally to prevent dough from sticking to your hands.
  4. Spray oil in the sev sancha machine with a sev disc installed.
  5. Fill the dough and close the lid.
  6. Heat oil on medium high heat.
  7. Hold the machine over the hot oil and make sev.
  8. Fry until golden.
  9. Carefully turn over and continue frying.
  10. Remove and drain on a paper towel.
  11. Continue until all the dough is finished.
  12. Note: Can make sev in different flavors. Choice of: red chili powder; ground black pepper; lemon juice; powdered dry green coriander.
